These Muffins are Bananas. B. A. N. A. N. A. S!

Nice job at the "Wednesday Booty Blast" ladies! My hammies are already yelling at me.
Since I didn't make it to the meet-up today I thought I'd post one of my favorite recipes on our handy dandy blog.
Everybody likes banana bread but unfortunately traditional recipes are not so healthy. I used to make a "clean" version of these that called for whole wheat pastry flour but when I started leaning more in the Paleo direction I had to change that. They're perfect for breakfast or a dessert...or lunch...or whenever because you're an adult and you eat when you want. So here's the rundown:

Ingredients:

  • 4 over-ripened bananas (The more ripe, the more flavor. Fred Meyer sells over-ripened ones cheap so yay!)
  • 4 eggs
  • 1/2 cup almond butter (I usually scale this down to about two heaping tablespoons because that ish is expensive.)
  • 1/2 cup coconut flour (It's at Fred Meyer in the gluten-free section and yes it's pricey but one small bag lasts forever.)
  • 2 tablespoons melted coconut oil
  • 1/2 cup honey
  • 1 big ol' tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder (yes, both)
  • 1 teaspoon vanilla
  • Pinch of sea salt
Instructions
  • Preheat oven to 350
  • Mash up your bananas real good
  • Mix bananas, nut butter, oil, honey, and eggs together. I use an electric hand mixer or you could use a food processor, blender or even a hoity toity VitaMix. (I'm super jealous if you have one.)
  • To that mixture, add your flour, cinnamon, baking soda/powder, vanilla, sea salt and mix well.
  • Make sure you're using a non-stick muffin pan, cute lil' cupcake wrappers, or just grease it down really well so they pop out nice and clean.
  • Bake for about 20-25 minutes until a toothpick comes out clean.
  • Let them cool down completely before trying to take them out.
So there you have it. They won't puff up like regular muffins/cupcakes so they're kinda fugly but they are sooooo good and they make the whole house smell amazing. If you're feelin' froggy you can even sprinkle some nuts or dark chocolate chips on top before they go in the oven. Yea...I said it, CHOCOLATE. 
I won't be in the gym tomorrow but hopefully I'll see everybody Friday. I'm going to start knocking out stuff on the competition board. Eek!
